Last week was the first week in the history of my blog that I only posted one recipe. Yikes! Just shows how crazy my life has been. I spent a lot of time helping with the Book Fair at my son’s school, and managed to pick up a head cold. Not only did I not have time for blogging, I didn’t have much time for cooking. We ate a lot of sandwiches last week! My boys are really looking forward to Thanksgiving. Ah, real food at last. 😉

This recipe for macaroons has been in my file for a few months. I tried some chocolate dipped macaroons at a wedding and I loved them. I had never made macaroons before because I didn’t think my boys would like them.

If they didn’t eat them, then I would be forced to eat the entire batch. Good for the taste buds, not good for my hips. Anyway, after trying them dipped in chocolate, I knew I had to re-create them at home.

These were darn yummy. Not as pretty as the ones at the wedding, but they sure were delicious. And unfortunately, um, I mean fortunately, all four of my boys loved them. There were no leftovers. Not a crumb.

I highly recommend baking them on cookie sheets that have been lined with silicone baking sheets, or at the very least parchment paper. They are pretty sticky!

COCONUT MACAROONS DIPPED IN CHOCOLATE

Yield: 2 dozen

Chocolate Dipped Macaroons

Chewy coconut macaroons dipped in melted chocolate.

Prep Time15 minutes

Cook Time15 minutes

Total Time30 minutes

Ingredients

  • 2/3 cup flour
  • 5 1/2 cups coconut
  • 1/4 tsp salt
  • 1 14oz can sweetened condensed milk
  • 2 tsp vanilla
  • For dipping:
  • 2 cups semi sweet chocolate chips
  • 2 Tbsp shortening or vegetable oil

Instructions

  1. Combine all ingredients in a large mixing bowl. Stir till well blended. I like to just use my hands.
  2. Drop by spoonfuls onto silpat lined cookie sheets.
  3. Bake at 350° for 12-15 minutes. Cool completely.
  4. Melt chocolate and oil in a small glass bowl in the microwave at half power. Dip macaroons halfway into chocolate and place on silicone baking sheets or parchment paper till set.

Notes

It takes a few hours for the chocolate to set completely, so plan accordingly.

    Need to make GF. Could I use almond flour or almond with equal parts of GF flour, hopefully it possible.

      I would try gluten free flour, it works better at binding the ingredients together than almond flour does.

    Hi Kara,
    Finally…..a macaroon recipe worth making again. Thanks so much. This is a keeper. Just wondering if you have ever frozen them and if so, how were they out of the freezer. Also, how do you store yours, room temperature or in the refrigerator, and how long are they fresh for. It’s just my husband and I and we don’t need all 26. So happy I go that many, but want to save some for our kids for Christmas. I’m going to dip mine in white chocolate and put some red and green sprinkles on and add them to my cookie trays.       So glad you loved them! I’ve never frozen them before, but I think they would work just fine. I usually just store mine at room temperature, and they last for 5 days. They may last longer, but we always eat them before that. 😉
      I love the idea of adding festive sprinkles, so fun!

      If I remember correctly, that is about the amount in a 14 ounce bag. But it’s been awhile since I made them, so there’s a possibility I’m wrong. 😉

    Love this recipe. Very easy. I made them a little smaller & got over 3 dozen. Half dipped in chocolate & half putting have a cherry on top before baking.

    Hi can I roll them into balls with my hand or does that make them too firm?

      They are pretty sticky, but you could try rolling them in balls. They will probably still spread as they cook though, so it might not be worth the trouble. You could certainly give it a try!

      I use sweetened, but I think they would be fine with unsweetened as well.

      It is pretty adaptable, you can make the cookies large or small depending on how many you need. I usually get about 24 cookies.
