How are Pork Tenderloin and Pork Loins Different?

There’s a few things to think about when making roast pork tenderloin vs porkloins. Don’t confuse these two cuts. They vary in size and thickness. So you’ll have to be flexible and adjust cooking times depending on the size of the pork.

  • Tenderloins are thinner and more tender, thus the “tender”. They cook quicker than regular pork loins. They are usually also smaller, ranging from 1-2 pounds.
  • Pork loins are thicker and often times more lean, thus resulting in a tougher cut of meat if you overcook it.
  • Cooking times will vary greatly, particularly if you bought the tenderloin, which cooks much faster. So cook your loin roast longer if it’s large or thick. If you’re cooking with pork tenderloin, then the cooking times will be quicker.
  • If you are unsure on how long to cook your roast, cook the pork loin until it reaches an internal temperature of 145°F in its thickest part.

  • 2 pounds (910 g) raw pork tenderloin roast
  • kosher salt , to taste
  • fresh cracked black pepper , to taste
  • 2 Tablespoons (30 ml) vegetable oil
  • 6 Tablespoons (85 g) butter
  • 3 cloves garlic , minced
  • 2 Tablespoons (30 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) yellow mustard
  • 1 Tablespoon (15 ml) dried herb mix ( basil, oregano and/or thyme)

Instructions

  • Preheat oven to 350°F/177°C.

  • Rinse and pat dry pork tenderloin, and then season with salt and pepper.

  • Heat a large oven-safe skillet on medium-high heat. Add oil and heat for about 1 minute. Sear the pork loin on all sides until a crust forms, about 1 minute per side. Remove pork from the pan and set it aside.

  • Turn off heat and remove pan from the heat. In same hot pan add butter, garlic, Worcestershire sauce, and mustard. Stir the sauce until the butter is completely melted.

  • Coat the pork tenderloin with dried herbs by patting it onto the loin. Place the pork back in the skillet and spoon some sauce over the pork loin.

  • Cover the pork tenderloin with foil and roast for 30 minutes.

  • Remove foil, spoon some more sauce over the loin and cook for about another 30 minutes or until the loin interior temperature reaches about 145°F/63°C.

  • Remove pork from oven and cover it with foil to let it rest for about 15 minutes. Slice thin and serve hot.

what other sauce can I use besides Worcestershire sauce? I unfortunately don’t have any right now

    • Best Recipe Box Reply

You can use soy sauce, it adds a nice savory flavor too.

  9. Lisa Reply

Very tender. Nice flavor. Easy to make and I will make it again! I did find the sauce a bit greasy at the end with the oil and all the butter. It had good flavor though. Next time I think I will substitute the butter with chicken stock.

this was excellent, and so easy to prepare. The tenderloin I purchased was already seasoned with cracked black peppercorns, so I did not add any extra. but I did everything else according to the recipe. I did not however, keep it in the oven as long as you recommended, I used my thermometer after minutes into the second go-round. When I saw it was at 150, I pulled it out of the oven and let it rest while I finished the rest of the meal. Tender, juicy, flavorful, just perfect! Thank you for posting this.

I would def. recommend cooking potatoes in the drippings. They’ll be the best you’ve ever had. Enjoy!

I’m trying this tonight. I’m new to alot of recipes. What is searing. And why sear meat

    • lauri Reply

searing is when you put the meat in a hot pan and roll it around to kind of seal the outside of the meat. It is supposed to make it more moist by sealing in the juices. 🙂

I’ve made this several times and my hubby loves it. The last time I made it after it was finished cooking I placed the meat on a serving plate to rest and covered. I then took the pan sauce and strained it to remove some of the grease, added some chicken broth and let it cook down a bit. I then added a cornstarch slurry to thicken it a bit and served it as a gravy over the meat. It was wonderful!
Thank you for sharing your recipe.

So delicious!! Made this for dinner and we all loved it. Looking forward to making it again. I seasoned it with all the seasonings and some onion powder before I cooked it. It was absolutely amazing! I also turned the pan drippings into a gravy. I didn’t want to stop eating. Unfortunately my tenderloin wasn’t very big. Definitely going to make this again!

YUM! This is one of the best pork tenderloin recipes I’ve tried! Thanks for posting; I’ll be making it again for sure. I added a bit of dried rosemary to the herb rub, otherwise I followed the recipe as written. I love that I had all the ingredients on hand. Big hit!

    • Diane Reply

Thanks Debbie! Adding that bit of dried rosemary sounds yummy.

Thank YOU! Easy peasy recipe to follow and it was delicious. Only change I made was adding a couple of more garlic cloves because….well, it’s what I do. 🙂 BUT…..my pork tenderloin was 2.2 lbs and I followed your directions to a T. However, when I took it out after 30 minutes to remove the foil and baste with the sauce, it was already at 170 degrees. Yes, I’ve calibrated my stove. I will make this again, but definitely cut the cooking time. Thanks again for the recipe.

    • Diane Reply

Thanks Delta! Wow that cooked fast for you. Thanks for the feedback and happy that you enjoyed the recipe!
