  • 1 cup finely chopped scallion
  • 1 scotch bonnet peppers (wear rubber gloves or use plastic sandwich bags to protect your hands from the volatile oils.) or 1 habanero pepper, seeded and minced (wear rubber gloves or use plastic sandwich bags to protect your hands from the volatile oils.)
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 12 teaspoons ground allspice
  • 2 tablespoons cilantro, minced
  • 1 garlic clove, minced
  • 1 12 teaspoons salt
  • 1 tablespoon brown sugar
  • 34 teaspoon dried thyme, crumbled
  • 12 teaspoon ground cinnamon
  • 1 14 - 1 12 lbs fresh ahi tuna, cut into 1 1/2 inch cubes
  • 2 small zucchini, cut into 1/2 inch slices
  • 1 red bell pepper, cut into 1 inch cubes
  • 1 red onion, sliced 1/2 inch thick and quartered
  • 1 fresh pineapple, peeled, cored and cut into 1 inch cubes
  • PINEAPPLE GLAZE

  • 23 cup pineapple juice
  • 5 tablespoons lemon juice
  • 1 tablespoon minced ginger
  • 14 scotch bonnet pepper, seeded and finely chopped (optional)
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons chopped cilantro

  • Put first 12 ingredients -- scallions through cinnamon -- into a blender and puree.
  • Pour marinade into a plastic bag, then add the tuna.
  • Place bag, sealed well, into the refrigerator for 2 - 6 hours, turning every once in a while to distribute marinade evenly.
  • If using wooden skewers, cover them with water in a shallow dish and let stand for 2 hours.
  • In a pot of boiling water, blanch the bell peppers, zucchini, and onion for 1-2 minutes depending on the size of the slices. Drain and pat dry.
  • Make pineapple glaze by placing pineapple juice, lemon juice, ginger, chili, soy, honey and cilantro in a saucepan. Bring to a boil, then turn down to medium low, cooking until mixture is reduced by half. Set aside.
  • Remove tuna from refrigerator and drain off marinade.
  • On metal or wooden skewers alternately thread ingredients: a slice of onion, tuna , pineapple, bell pepper, zucchini, etc. or in any order that pleases you.
  • Heat grill to medium high and cook the kabobs for about 6-8 minutes total, turning once. Use pineapple glaze often to brush on kabobs as cooking and to drizzle any remaining on plates.

  1. These were really great! I made them on my electric grill in my apartment, and they still turned out juicy and tasty. Greg doesn't like tuna steak so I substituted chicken on his half of the kabob's, which worked well, too.I would leave out the ginger next time, but then again that was one of my Greg's favorite aspects of the flavors.Thanks for posting, I'm definitely making this again, especially while I'm watching my calories.

  2. I've never prepared grilled tuna - only had tuna from a can - so this was something new for me. It turned out to be delicious - the perfect meal for the summer grill. I must admit that I wimped out and did not use a scotch bonnet or habanero pepper but used a jalapeno because I am not a big fan of heat and wanted to enjoy the flavors of the many ingredients. Thanks for another new cuisine for me. :)

  3. I was quite hesitant about having to make a jerk recipe for ZWT3, really didn't think I was going to like it, but this tuna was excellent! I was making just a single serving so I decided not to do kebobs. I marinated (5 hours) an ahi steak and then grilled it. I subbed a jalepeno pepper, as past experience with some habenero salsa continues to haunt me. It was lightly spicey, and I might add even a little more the next time I make it (there will be a next time! I also used powdered ginger because I had left my fresh ginger at the 4th of July party I went to the night before. I loved the glaze, and wished I had doubled it. Instead of making the pepper/onion/ pineapple part of the kebobs I added some canned pineapple chunks to a little bit of the glaze and cooked it for a few minutes then served it with the fish; I just wanted more!   5. These really are magic! Everything blended together beautifully and the heat of the chili was well offset by vegies and the pineapple. At first I thought the marinade my have been a little too strong for the tuna but that wasn't the case. Only change I had to make was to use tinned pineapple because I couldn't find fresh, but it certainly is a dish worthy of a nice fresh pineapple when available.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p><p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
