The first time I had pimento cheese was during a vacation with friends at Wilmington, North Carolina. We stopped to eat lunch at a restaurant, called Dockside. It is exactly as the name describes, a restaurant situated adjacent to a boat harbor.

I ordered a pimento cheese and bacon grilled sandwich for lunch. That in itself isn’t that big of a deal, but there was something about eating that sandwich outside watching the boats come in and out that made it taste exceptionally delicious. Pimento cheese seems to taste better dockside.

That is unless you add white cheddar cheese to your Pimento cheese dip, then it tastes good anywhere it is served!

How Do You Make This Pimento Cheese Recipe?

You are going to love how simple this recipe is to make!

In a large bowl, stir together, shredded white cheddar cheese, shredded Monterey Jack cheese, cooked bacon, diced pimentos, mayo, garlic salt, and Worcestershire sauce, stirring to combine. Season the cheese spread with pepper to taste.

Place the pimento cheese in a serving bowl and serve crackers, cut veggies, or toasted bread rounds!

How Long Does Pimento Cheese Last?

I would not let this cheese spread sit out for more than an hour or so because of the mayo. Refrigerate leftover pimento cheese in an airtight container. If stored properly, your cheese should last for up to two weeks.

I love the tangy flavor of white cheddar and the Monterey Jack cheese is there to take the flavor, you use a combo of white and regular cheddar or mix in pepper Jack, provolone or mozzarella.

I can find diced pimentos in the canned veggie aisle. If you are struggling to find them, finely diced roasted red peppers or even fresh red peppers can be used instead,

Feel free to add some heat by adding happed jalapeno peppers, green chilies or cayenne pepper!

Can You Freeze Pimento Cheese?

Yes, but you cannot serve it as a dip once it has thawed because the oil in the mayo will break down. However, you CAN stir into recipes like mac and cheese!

  • 1 cup jack cheese, shredded
  • 4 slices cooked bacon, chopped
  • 4 oz drained pimentos
  • ¼ cup mayo
  • ⅛ teaspoon garlic salt
  • ½ teaspoon Worcestershire sauce
  • Pepper to taste

Instructions

  1. In a large bowl, stir together, shredded white cheddar cheese, shredded Monterey Jack cheese, cooked bacon, diced pimentos, mayo, garlic salt, and Worcestershire sauce, stirring to combine.
